Ingredients

For the bowl

  • 2 cups cooked Lundberg Family Farms Organic Jasmine Rice (white, brown, or jasmine)

  • 2 cups cooked turmeric chicken, sliced or shredded

  • 1 cup shredded red cabbage

  • 1 cup fresh spinach or mixed greens (optional but great for extra color)

Directions

Make the turmeric chicken

  1. Add the cooked chicken to a skillet with olive oil over medium heat.

  2. Sprinkle in turmeric, garlic powder, onion powder, salt, and pepper.

  3. Stir until the chicken is warm and evenly coated in the spices.

Make the Green Goddess dressing

  1. In a blender or small food processor, combine yogurt, mayonnaise, parsley, basil, chives, lemon juice, garlic, olive oil, salt, and pepper.

  2. Blend until smooth and creamy. Adjust lemon or salt to taste.

Assemble the bowl

  1. Add a scoop of rice to each bowl.

  2. Top with turmeric chicken, shredded red cabbage, and greens if using.

  3. Drizzle generously with the homemade Green Goddess dressing.
