Simple Paleo Plate with Rosemary Potatoes, Sharp White Cheddar, Avocado, Hamburger Patties & Roasted Broccolini

Some dinners look fancy but take zero brainpower, and honestly, that's my favorite category of food. This plate is basically the definition of "simple but impressive": crispy rosemary potatoes, charred broccolini, juicy hamburger patties, creamy avocado, and few slices of sharp white cheddar for that salty bite. It's paleo-lean, super filling, and feels like something you'd get at a farm-to-table cafe-except you made it in 30 minutes at home.


What I love most is how everything on the plate tasted good on its own, but together it's this perfect mix of textures; crunchy, creamy, melty, and savory. It's the kind of meal that makes you feel like you're taking care of yourself without doing anything complicated.


Directions:

Roast the Potatoes

  • Preheat the over to 425 degrees Fahrenheit

  • Cut the potatoes in halves or quarters (approximately 1/2" pieces)

  • Bowl enough water for the potatoes

  • Put the potatoes in for 5 minutes, remove with a slotted spoon and pat dry with paper towels.

  • Toss the halved potatoes with olive oil, rosemary, garlic powder, salt, and pepper

  • Spread them on a baking sheet lined with parchment paper, cut-side down

  • Roast for 25-30 minutes, flipping halfway, until golden and crispy.


Roast the Broccolini

  • On a separate sheet pan, toss the broccolini with olive oil, salt and pepper

  • Add it to the oven during the last 12-15 minutes of the potato roasting time

  • Cook until all the stems are tender and the tops get a little charred


Cook the Hamburger Patties

  • Form the ground beef into 4 equal patties

  • Season both sides with salt, pepper, and onion powder

  • Heat a skillet over medium-high heat and cook for 3-4 minutes per side, or until they reach your preferred doneness

  • Let them rest for a minute so the juices settle


Assemble the Plate

  • Add a scoop of rosemary potatoes, a handful of roasted broccolini, and one or two hamburger patties

  • Slice the avocado and tuck it next to the patties

  • Add a few slices of sharp white cheddar for that perfect salty-creamy contrast


Ingredients:

Roasted Rosemary Potatoes

  • 1 lb baby potatoes, halved

  • 1 1/2 tablespoons olive oil

  • 1 teaspoon dried rosemary (or 1 tablespoon fresh, chopped)

  • 1/2 teaspoon garlic powder

Hamburger Patties

  • 1 lb ground beef

  • 1/2 teaspoon Maldon salt

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon onion powder

Roasted Broccolini

  • 1 bunch broccolini

  • 1 tablespoon olive oil

  • 1/4 teaspoon salt

  • 1/8 teaspoon black pepper

Plate Add-ons

  • 1 ripe avocado, sliced

  • 2-3 oz sharp white cheddar, sliced
