Simple Gluten‑Free Tacos

A quick, colorful dinner that proves “easy” can still taste amazing. There are days when you want to cook something delicious but your brain is basically running on low battery. That’s when these gluten‑free tacos save the day. They’re simple — like, genuinely simple — but they still feel fresh and satisfying. White or yellow (which we used) corn tortillas keep everything naturally gluten‑free, the seasoned beef brings all the cozy taco‑night vibes, and the tomatoes and lettuce add that crisp, colorful crunch that makes the whole plate feel alive. This is one of those meals that works for busy school nights, weekend hangouts, or honestly anytime you want something that tastes like effort without actually requiring much.
Ingredients
For the Seasoned Beef
1 lb ground beef
1 tablespoon olive oil
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon chili powder
1 teaspoon cumin
½ teaspoon garlic powder
½ teaspoon paprika
Optional: a splash of water to help the spices coat the meat
For the Tacos
8 small corn tortillas
1 cup chopped lettuce
1 cup diced tomatoes
Optional: shredded cheese, salsa, or avocado
Directions
Cook the Beef
Heat olive oil in a skillet over medium heat.
Add the ground beef and break it up as it cooks.
Once it’s mostly browned, sprinkle in the salt, pepper, chili powder, cumin, garlic powder, and paprika.
Stir well so the spices coat the meat.
Add a splash of water if it looks dry and let it simmer for 2–3 minutes.
Warm the Tortillas
Heat a dry skillet over medium heat.
Warm each corn tortilla for about 20–30 seconds per side until soft and flexible.
(This tiny step makes a huge difference.)
Build Your Tacos
Lay out the warm tortillas.
Add a spoonful of seasoned beef to each one.
Top with lettuce and tomatoes.
Add any extras you like — cheese, salsa, avocado — or keep it super simple.
