Hot Honey Halloumi Tacos

When summer is right around the corner, an easy, healthy dinner is all I want to make. This new take on tacos is perfect. With bright and fresh flavors given through the pomegranates and avocado, complemented by the savory, rich notes of the halloumi. Beautifully paired by the sweet and spicy kick of the hot honey, creating a myriad of flavors that taste like summer itself. This new take on the classic taco dish has me making them at least once a week every summer. I can promise you these tacos are so foolproof that anyone could make them (and trust me, you will... many times).
Directions:
Prep the halloumi: pat dry and pan-fry over medium-high heat for 2-3 minutes per side until golden and crisp.
Glaze the halloumi: Once the cheese is golden brown, drizzle the hot honey over it in the pan and toss to coat
Warm the tortillas
Assemble the tacos: spread yogurt on each tortillas, layer the yogurt, arugula, glazed halloumi, pumpkin seeds, and pomegranate seeds
Ingredients:
16 grams of halloumi cheese
2 Tablespoons of Nate's Hot Honey
2 cups arugula
1/4 cup Go Raw pumpkin seeds
4 Tablespoons Chobani non-fat plain Greek yogurt
1 tsp white wine vinegar or lemon juice
1/2 c pomegranate seeds
