Ingredients
For the Roasted Veggies
2 cups sweet potatoes, peeled and diced
2 cups broccoli florets
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon paprika (optional but delicious)
For the Cauliflower Rice
3 cups cauliflower rice (store‑bought or homemade)
1 tablespoon olive oil
½ teaspoon salt
¼ teaspoon garlic powder
For the Bowl
1 ripe avocado, sliced
Optional toppings: lemon wedges, sesame seeds, hot sauce, or a drizzle of tahini
Directions
Roast the Sweet Potatoes & Broccoli
Preheat your oven to 425°F.
Spread the diced sweet potatoes and broccoli florets on a baking sheet.
Drizzle with olive oil and sprinkle with salt, pepper, and paprika.
Toss everything so it’s evenly coated.
Roast for 20–25 minutes, flipping halfway through, until the sweet potatoes are caramelized and the broccoli edges are slightly crispy.
Cook the Cauliflower Rice
Heat olive oil in a skillet over medium heat.
Add the cauliflower rice, salt, and garlic powder.
Cook for 5–7 minutes, stirring occasionally, until tender and lightly golden.

Build Your Bowl
Start with a base of warm cauliflower rice.
Add the roasted sweet potatoes and broccoli.
Top with sliced avocado.
