These are my go‑to when I want something fresh and flavorful without spending forever cooking. I cheat a little by using rotisserie chicken (honestly the best shortcut ever), and then season it with Siete Mild Taco Seasoning, which gives it that warm, slightly smoky flavor without being spicy.
The Green Valley lactose‑free mozzarella melts beautifully and adds just enough creaminess without overpowering the chicken. And the white corn street tortillas make everything taste super authentic — soft, warm, and perfect for folding into tiny handheld tacos. They’re simple, colorful, and totally feel like something you’d grab from a food truck on a sunny afternoon.
Ingredients
2 cups shredded rotisserie chicken
1 packet Siete Mild Taco Seasoning
1 cup Green Valley lactose‑free mozzarella cheese
8–10 Mission Street Tacos - white corn tortillas (honestly, the best for gluten free)
1 tablespoon Bono 100% Italian Organic Olive Oil or butter (for warming tortillas)
Optional toppings: diced onion, cilantro, lime wedges, salsa verde, avocado
Directions
Prep the chicken: Shred the rotisserie chicken into small pieces so it heats evenly.
Season it: Add the chicken to a skillet over medium heat. Sprinkle in the Mild Siete Taco Seasoning and a splash of water. Stir until everything is coated and warmed through. A secret trick is to sprinkle cheese on the chicken with the seasoning ... it creates melty goodness.
Warm the tortillas: Heat a little olive oil or butter in a pan and warm each tortilla for about 20–30 seconds per side until soft and slightly toasted.
Assemble the tacos: Add a scoop of seasoned chicken to each tortilla. Sprinkle with Green Valley mozzarella so it melts slightly from the heat.
